create a lost and found email in exchange 2007

Dear all,

i would like to create a email or need to enable feature in MS Exchange 2007, that all email goes, if the recipient not found or deleted email

actually, we some employee that left the company and we delete their emails, but some old contact still sending them on the same email, i would like to rearward those all in one inbox,

is it possible ?
