Issue when member leaves organization and then rejoins a few months later

We had a user leave the organization about a year ago. He was deleted out of our Active Directory and Exchange 2010 environment. When he was re-hired we created his account in Active Directory and Exchange like we would any other user. Now, when some users tries to email him it will kick back as undeliverable even though they have the correct information. I have determined that this issue has to do with users having this employee as a contact in their Contacts within Outlook, but it is somehow tied to his old email address before he left (even though it's the same exact email address). If the sender navigates through our Global Address Book and selects the employee this way it remedies the issue, but is there a way from the backend I can fix this? Think about hundreds of people in the organization continually trying to email you, but you have to tell each one of them the steps they need to take to email you. This can be understandably frustrating for the user. Could someone articulate in layman's terms what's happening here? Any help you can give would be greatly appreciated.
