Retention period is 30 days - exclude unread emails from the 30 day deletion

in exchange 2003 we had this setup but cannot find a way in 2010, our users set reminders on emails and our strict 30 day policy removes the mail and the reminder after 30 days, does anybody know how to add this policy?
